You know how I feel about margaritas. OBSESSED.

But in a strange twist of events, I didn’t miss margaritas while I was pregnant. Like, at all. When it came to alcohol, all I wanted was a cold beer. And this craving lasted for pretty much the whole pregnancy, to the point where it actually sorta bothered me. I enjoy a good microbrew from time to time, but I never would have chosen beer over margaritas pre-pregnancy. Leave it to me to develop a serious love for beer after leaving Portland. Sigh. I wondered if I’d ever be “normal” again.

Naturally after Kai was born, I had to test myself. And no better way to do it than with homemade passion fruit strawberry margaritas, inspired by the start of strawberry season.

Unlike strawberries, fresh passion fruit is pretty easy to find in Hawaii year-round. But I know from experience it’s not always easy to find tropical ingredient like passion fruit outside of the islands. So I wanted to share a little secret with you. I recently discovered the frozen purees and concentrates from Perfect Puree of Napa Valley, and I’m in heaven. These flavor bombs are a little pricey, but a jar will last forever (margaritas all year?) – and they’re really high quality. Basically they allow you to taste the tropics from wherever, whenever. Brilliant, right?

So anyway, I whipped together this recipe for passion fruit and strawberry margaritas. And guess what? Waaay better than beer.

Passion Fruit Strawberry Margaritas

Ingredients
1/4 cup fresh strawberries
1 oz Passion Fruit Concentrate from Perfect Puree of Napa Valley
1 oz water
2 oz tequila
¾ oz agave syrup
1 oz fresh lime juice
Ice
Salt, lime wedges and strawberry slices for garnish (optional)
Instructions
Puree the strawberries in a blender, and set aside 1 1/2 oz. In a small bowl, mix together the passion fruit concentrate and water until combined. Next, add the pureed strawberry, passion fruit mixture, tequila, agave, fresh lime juice and ice to a cocktail shaker and shake well. Salt the rim of your glass if desired, and fill with ice. Strain the margarita into the glass and garnish with a lime wedge and strawberry.
